Natamycin, a nearly white or cream yellow crystalline powder, is a odorless, low-dose and safe food preservative. Natamycin is slightly soluble in water but hardly soluble in most organic solvents. The solubility of water at room temperature is 30~100mg/L. When pH is lower than 3 or higher than 9, the solubility is increased, but the stability of natamycin is decreased.
Natamycin is a natural, broad-spectrum, efficient and safe fungal inhibitor of yeast, mold and other filamentous fungi. It can not only inhibit fungi, but also prevent the production of fungal toxins. Natamycin is harmless to human body. It is difficult to be absorbed by human digestive tract, and it is difficult for microorganisms to develop resistance to it as well. Because of its low solubility, it is usually used for food surface preservative.
Natamycin is used to treat fungal infections, including candida, aspergillus, fusarium, etc. It is also used in eye drops or oral drugs, where the body absorbs less natamycin. When taken orally, it is almost never absorbed from the gastrointestinal tract, making it unsuitable for systemic drugs. Natamycin is also used in eye drops, with a concentration of 5% natamycin, for the treatment of fungal blepharitis, conjunctivitis, and keratitis caused by microorganisms, including fusarium humacus keratitis.
